Better than Grandmas Pumpkin Muffins

Hey Everyone!

First of all, thank you so much for visiting my first blog! I am new to the blogging world and am seriously hoping I don’t fall flat on my face… BUT you only live once so why not go after the things you want most in life and do the things that make you the most happy? I can’t tell you how many times I have sat at my computer and thought “should I, or should I not?” And tonight, I finally thought, “you know what? I’m just going to go for it!” So here I am, creating my website and writing my first blog while baking the worlds most moist pumpkin muffins! (Will post the recipe for all you pumpkin fans out there!)

I, like a lot of people, really love pumpkin season and my Vanilla Chai Latte with almond milk becomes a Pumpkin Chai Latte with almond milk. First day of September I start bringing out all of my fall decor (which isn’t much) and start my decorating! Any time I go to Big Lots or Hobby Lobby, I look for more fall decor to put around my house. Now, mind you, I live on the coast of Oregon and in order to get to Hobby Lobby I have to drive two and a half hours. But, that’s ok, because as soon as I step foot into the store I get giddy and totally forget that I just drove that long distance, am starving by this time, and the fact that I even have to use the restroom. I. LOVE. HOBBY LOBBY! It’s impossible for me to spend less than $100 there so I try not to go too often.

We have this antique shop in Coos Bay called Leaf’s Treehouse (if you ever come to Coos County, it is a MUST!) and the owners are always doing some sort of project. This year they made these adorable stuffed pumpkins that I could not help to buy! There were only a few left by the time I got there, so I only ended up with one, but am going back to see if they have more later this week! But the store is more of a mini mall, with so many vendors and things to look at, it’s almost like our own little Hobby Lobby here in Coos Bay. But the owners of the store are great and if they don’t have what you’re looking for, let them know and they’ll call you if they get it in!

I am an avid baker, you guys. I love baking, if there is ever a recipe you would like me to test out for you, just let me know! The recipe below is so, so yummy! I made over two dozen and took them to work with me and handed them out to people coming in to our office just for fun because if I leave them at home, I end up eating too many and my husband doesn’t help hardly at all.

Another good recipe that I will post later this week, is Apple Pie Bread Pudding! Yumm…

The Traveling Entrée

BETTER THAN GRANDMA’S PUMPKIN MUFFINS

1 ½ Cups Flour
¼  tsp Baking Powder
1 tsp Baking Soda
½ heaping tsp Cinnamon
½ tsp Nutmeg
1 heaping TBSP Pumpkin Pie Spice
½ Cup Butter
1/3 Cup plus 2 TBSP Sugar
1 cup packed brown sugar
2 eggs
½ can of Libby’s pure Pumpkin
1 tsp vanilla extract
1/3 Cup Water
1 TBSP Agave Nectar
  1. Preheat the oven to 350’
  2. Line a cupcake pan with liners (I like to spray the liners with cooking spray because it makes it easier to remove the muffins from the liners when eating them)
  3. Mix the flour, baking powder, baking soda, cinnamon, nutmeg, and pumpkin pie spice in a medium sized mixing bowl.
  4. Melt the butter in the microwave and then in a stand mixer, add your sugars and butter and beat until well blended
  5. Add in the eggs, one at a time, then mix your pumpkin, water, vanilla, and agave nectar.
  6. Slowly mix in your dry ingredients just until blended
  7. Fill cupcake liners about ¾ the way full and bake 30 minutes
